On December 12th, an open class will take place within the scope of the Master’s in Cultural Heritage, entitled “Among stories about the act of eating: a journey to the food heritages of the Contemporary Era”. The class will be taught by master Paula Grenha, in a face-to-face format , in room 0.13 of Building 2 of the Gualtar Campus, at the University of Minho.
Abstract: The history of food is intrinsically linked to the social, political and economic evolution of societies, unfolding between episodes, characters and discoveries that marked and encouraged the progress of agriculture, industry, commerce and the very meaning of the act of food. eat. A diet that responded to the nutritional and subsistence needs of a changing demography, but also to the multiple hedonistic, status and convenience demands of populations that were redefining themselves geographically and culturally throughout the Contemporary Era, was the engine that urged creativity, imagination and the resolution of multiple daily challenges that were related to food availability and the quality of the food itself.
On a journey through some of these stages that reshaped the context and way of seeing and understanding food, some of its promoters, resisters and innovative strategies that indelibly transformed the world in terms of what to eat and how to eat are revealed. Observing the paradoxical resurgence of diseases of poverty, food abundance was confronted with philosophies and religious guidelines, instigating the advancement of food and nutrition sciences that tried, and still try, to respond to the constant demands of a healthy diet, in a path that necessarily converges with the inalienable pleasure that has always involved the act of eating.
